Steaming asparagus is the fastest method to cook them, but a common mistake is to overcook and you can lose a lot of the flavor. Nobody wants bland, soggy asparagus. Roasting asparagus takes a little bit longer, but they taste amazing and the ends will get crispy. I’ve added simple seasonings to keep this dish basic and light. When you are trying to think of a good veggie side, this is always a great option.
Roasted Asparagus Recipe
Roasted Asparagus Save Print Serves: 3-4 servings Ingredients
- 1 bunch asparagus
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 1 lemon
- salt and pepper
Instructions
- Heat the oven to 400 degrees. Rinse the asparagus and cut one inch off the bottom of the stems.
- Line a rimmed baking sheet with foil, and lay asparagus onto sheet. Drizzle the asparagus with olive oil, add the minced garlic and half of the zest of one lemon. Sprinkle with salt and pepper. Toss the asparagus in your hands to make sure all are coated. Spread them back on the baking sheet so that they are in a single layer.
- Place the asparagus in the oven. After 10 minutes, use a spatula to stir them, and then roast for another 7-8 minutes.
- When the asparagus are finished cooking, sprinkle the remaining lemon zest along with some lemon juice, and serve.
