ONE and DONE

Who doesn’t love ground turkey?! I keep it on hand in the freezer for those weeknights where I don’t have time to go to the store. I can usually thaw it out and whip up something easy and awesome. Nix the noodles to make this lower carb. Toss these leftovers with eggs in the morning  – delish! Best part about this recipe? ONE POT.

One Pot Southwestern Turkey Pasta Recipe

One Pot Southwestern Turkey Pasta   Save Print Ingredients

  • 3 tablespoons canola oil
  • 1 pound ground turkey
  • ½ teaspoon salt pepper
  • ½ teaspoon pepper
  • ½ cup chopped onion
  • ½ cup chopped green or red bell pepper
  • 1 14.5 ounce can diced tomatoes
  • 1 15.25 ounce can black beans
  • 1 cup corn
  • 1 packet of taco seasoning
  • 2-2.5 cups water
  • 8 ounces elbow pasta
  • 2 cups shredded Mexican cheese blend

Instructions

  1. Heat a large skillet over medium heat.
  2. Add in your oil and the ground turkey, salt, pepper, onion,
  3. and peppers. Cook until the turkey is longer pink.
  4. Once the turkey is cooked, add in the corn, black beans, tomatoes, taco
  5. seasoning, and water.
  6. Bring everything to a full boil and add in the pasta
  7. Reduce the heat to a low simmer and cook for 8 minutes stirring
  8. occasionally to make sure the pasta isn’t sticking to the bottom of the pan.
  9. Once the pasta is cooked, add in the cheese and stir until the cheese is
  10. melted.
