HATCH CHILES ENCHILADA CASSEROLE

Oh my goodness, Casseroles, I’m sorry, but I can’t give up on you.

Warming, filling, savoury, delectable, and simple. All of these words come to me when I think of a good casserole. You know, casseroles sometimes get a bad rap for being unhealthy and just a big mound of slop. Well, slop or no slop, I’m for casserole if it tastes delicious, and I’m for this Hatch Chile Enchilada Casserole.

Enchilada Casserole with Hatch Chiles

This one is SUPER EASY, absolutely delicious, and Paleo-friendly! You may be imagining yourself when you combine all of the ingredients in a mixing bowl, “I’m not sure about this one.” That’s OK, I had the same thought. When I was making this Hatch Chile Enchilada Casserole. However, the flavours shine through, and it was DELICIOUS! Even people who aren’t fans of casseroles enjoy it.

So there you have it. Put on your aprons and start making casseroles, my friends!

Serve: for these ingredients, 4 Persons can be served.

INGREDIENTS

  1. • 1 cup chopped roasted hatch green chillies, I use mild chillies. You can use either canned or fresh tomatoes. (If using fresh roasted hatch chiles, remove the skin of the peppers first.)
  2. • 2 cups chopped cooked chicken Siete Cashew Queso Spicy Blanco, 10 oz
  3. • 2 garlic cloves, minced a half cup of salsa verse
  4. • 5 half cassava tortillas, cut into 1-inch strips
  5. • kosher salt (½ teaspoon)
  6. • black pepper (¼ teaspoon)
  7. • Olive oil (1 teaspoon extra virgin cilantro) for garnish

INSTRUCTIONS

  1. • Preheat the oven to 375 degrees.
  2. • Combine the green chiles, chicken, cashew queso, garlic, salsa verde, tortillas, salt, and pepper in a mixing bowl. Stir until everything is well blended.
  3. • Using a spatula, spread the casserole ingredients evenly around the baking dish. Drizzle the olive oil over the top of the casserole. Use either a loaf pan or small baking pan with non-stick
  4. • Switch to the Preheated oven and bake for 25 minutes. Remove from the oven and set aside for 5 minutes to cool. Serve with a sprinkle of salsa verde and cilantro on top. Enjoy HATCH CHILES ENCHILADA CASSEROLE!
