My Hometown Favorite Salad

For those of you who are looking to live healthier, but don’t want to give up your favorite salad recipes, you’re in luck. The original Carrabba’s in Houston is one of my favorite restaurants. My mom, sister and I would go and never needed a menu as we always ordered.

I remember those days when my mother used to have a backyard garden, spending time on it, which was like a time waste to me (in those days). She used to say that vegetables are good supplements for our health, and we must include it in our dishes.

We used to hate vegetables, and said its tasteless, I remember eating cucumbers, jicama, radish and lettuce, with shrinking faces until my mother came to introduce to me something that was more than a vegetables, a mix of all of them.

One day we went to one of the Italian-American restaurant in our town, received by girls wearing black dresses with orange aprons, smile holding a book and a pen asking for what menu we wanted to be served with.

There is where I discovered the secret that am going to share with you today. The salad!! Dressed with creamy milky parmesan, and trust me from there I decided to make my own at home locally.

Technically speaking, a salad is all about dressing. Meat, vegetables or even pasta, when mixed with a mayonnaise or parmesan.

Ingredients

  • 1 bag of fresh baby spinach
  • 1 cup of fresh pineapple, cut into chunks
  • 1 red bell pepper, sliced thinly
  • ¼ cup sunflower seeds
  • ½ cup dried cranberries
  • 3 tablespoons Parmesan cheese
  • Creamy Parmesan Dressing (recipe below)

These days I grow my carrots and lettuce on backyard, just like my mother and make my salad with parmesan

How to Make a RESTAURANT STYLE HOUSE SALAD

Making my salad at home will just need some minutes, about 5 minutes to prepare them. I am fond of meat, so I will buy my chicken meat, and put it aside first.

I will have carrots, slice them in a reasonable sizes, lettuce, torn in pieces, and ¼ of olive and put them in a bowl.

I will go for a mayonnaise, buttermilk, grated parmesan, kalamata olive and garlic clove, putting them into a blender, blend them together to get a smooth creamy solution that I will use for dressing. Remember I said salad is all about dressing.

After blending them to get smooth solution, I will mix to combine with carrots, lettuce and kalamata olives (dressing), tossing little by little in order not to overdress it, but you are not limited, you can pour the mixture as much as you see fit for you.

To give it a flavor and water mouthing, I will top it with pepperoncini and serve with chicken I bought and kept aside in the beginning.
