Almost every recipe you will encounter mentions either chopping, dicing, or mincing. Sometimes there can be confusion on a chop versus a dice, etc. When chopping vegetables and herbs, it’s best to use a chef knife and employ the rocking motion with your fingers curled in. Cookbook author Sandra Gutierrez has a 1 minute video that demonstrates this really well.
A chop is the largest cut of vegetable, a dice is a medium cut, and a mince is the smallest cut. If you ever see the term rough chop, that means the pieces are larger than a regular chop and are not uniform in size/shape. Use this as a guide as you move forward in your culinary experiences!
